La Maison Romane Hautes-Cotes-du-Nuits Blanc, 2020 Grenache and more of that tangyThis wine is made of 100% Chardonnay. We would pair this with a delicious and savory clams casino. The grapes come from 35+ year old vines from the French commune of Villars Fontaine. Direct pressed and fermented on its lees for 3 months, before 10 more months of aging with the lees removed. Winemaker Oronce de Beler's philosophy is to showcase the fruit and terroir, intervening as minimally as possible with VERY conservative addition of sulfites.
